BRAISED RED CABBAGE WITH BLUEBERRY & BASIL
Add some intense colour to your meal with our beautiful braised red cabbage recipe featuring blueberry & basil vinegar.
METHOD
1. Melt duck fat in large casserole dish on low heat and then add the sliced red cabbage. Soften for 5-10 minutes. Add the grated apples and brown sugar. Season with salt and pepper.
2. Pour in the wine and port, then bring to boil.
3. Turn down the heat to simmer for 30 mins, checking from time to time.
4. Add the blueberry & basil vinegar and cook until soft and delicious.
